Wild Garlic

Season: February - April 

To forage: Wild garlic is one of the first signs of spring in nature and brings me so much joy for that reason alone. I absolutely love going to check my usual spots to see if I can see the first signs when I'm getting tired of the seemingly endless winter. Find wild garlic in marshy soil, usually near streams or rivers. 
To eat: earlier in the season it's good to eat raw as it's still quite sweet but as the season goes on I recommend cooking it to eat. Delicious in a pesto along with other herbs to dampen the strength slightly. Later you can pickle the buds before they flower.
