White miso butter beans

This is a very quick recipe if you don't have many ingredients and need a speedy lunch. 

Peel and slice the shallots and garlic. Cook the shallots in two tablespoons of sesame oil and a pinch of salt until they are soft, this should take about ten minutes. Once they are soft add the garlic and ginger and cook until the garlic is translucent. 

Drain the butter beans and add them along with the white miso (and water), oat milk, a pinch of salt, and one tablespoon of rice vinegar.

Cook the beans at a simmer for ten minutes and then add the spinach, mixing it in with the beans.

The beans should still have a bit of liquid with them so you are left with a butter bean broth. Serve with red chilli and fresh coriander leaves.

Serves 1. 

1 can butter beans 

2 tbsp sesame oil 

2 generous tbsp of white miso paste, dissolved in 200ml hot water

2 shallots 

2 tbsp oat milk

4 cloves garlic 

1 thumb fresh garlic 

1 tablespoon rice vinegar 

A pinch of fresh chilli, optional 

A handful of fresh coriander leaves, optional
