Tomato and mascarpone pasta sauce

Dice the onion and cook it low and slow in the olive oil. Add the thyme leaves and season with salt and black pepper. It should take about 10 minutes for the onion to soften fully.

Add the garlic, let it cook with the onions for a couple of minutes, and then add the tinned tomatoes and then put the heat for a few minutes.

Add the mascarpone, let it melt in, and then squeeze the lemon juice in too.

Tomato and mascarpone pasta sauce

Let this all cook together for a few minutes while your pasta is cooking and then pour it into a container and blend it until it’s smooth.

If you don’t use it all, it can be stored in the fridge and used again for a few days.

1 small onion
2 cloves of garlic
1 can of tinned tomatoes
130g mascarpone (any soft creamy cheese will do)
Juice of 1/4 lemon
A couple of sprigs of thyme
Olive oil
Salt and pepper
