Pan Con Tomate

Cut 2-3 slices of bread and toast them.

Using a box grater on the largest setting, grate the whole tomatoes into a bowl keeping all the juices and skins together. 

Either finely slice or grate the peeled garlic into the tomatoes. 

Pan Con Tomate

Add the olive oil and sea salt to the tomatoes and mix everything.

Rub the other clove of garlic onto the toast and then add the tomato mixture on top.

Pan Con Tomate is delicious served on its own but also with a friend egg or anchovies on top.


Serves 2 

2 slices of sourdough bread (or any bread you want to use) 

4 plum tomatoes 

2 cloves of garlic, peeled 

A tablespoon of good quality olive oil 

A big pinch of sea salt
